
20 Apr Vietnamese Beef Stew- Bò Kho
Have you ever tried Vietnamese Beef Stew – bo kho (Bò Kho) ? it’s so flavorful and the beef is soft- melting in your mouth after first bite. It’s very easy to do if you marinade the meat well with the right spice.
You can enjoy the dish with banh mi or rice noodle or egg noodle.
Ingredients:
-3 lbs of beef. I bought the pack at Costco for beef stew – it does say on the label; this beef can also be used for Vietnamese Beef Stew. However, any kind to your liking would be good.
-4 tablespoon of mushroom seasoning (or chicken stocking)
-2 tablespoon of salt
-2 tablespoon of brown sugar
-2 tablespoon of 5 spice flavor .You can buy it here:
Oriental Beef Spices (Gia Vi Nau Bo Kho), 2 oz. (56.7g) Bag, 2-Pack
-4 tablespoon of fish sauce
-2 tablespoon of lemongrass
-Other spices: garlic, onions, star anise, cinnamon, black pepper, ground pepper, one coconut.

Step 1: Marinade the meat- leave for 3 hours or overnight.
Step 2: Stir fried the garlic, cinnamon, star anise, chop onions, lemongrass with all the beef together. Cook on high heat for 3 minutes.
Step 3: Pressure cook the meat for 20 minutes. Pour water cover the meat and add one coconut juice in there as well.
Step 4: Stir fry some carrots with garlics, 2 teaspoon of mushroom seasoning and 2 teaspoon of soy sauce all together for 3 minutes. Now add all the carrots to cook with the beef for another 5 minutes.
Now everything is ready to eat! Enjoy this Vietnamese Beef Stew with some lime and fish sauce…:)
